What each ingredient does

Mashed potatoes
Provide starch that feeds the yeast and adds body and moisture to the starter.
Compressed yeast
Ferments sugars and produces gas, causing the starter to rise and become active.
Sugar
Serves as food for the yeast, speeding fermentation and adding a little sweetness.
