Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef joint
Forms the main meat, which turns tender and juicy through slow roasting after hanging.
Flour
Dredged over the joint with salt, it helps form a browned crust on the outside.
Horseradish sauce
Adds sharp heat that contrasts with the rich, fatty flavour of the roast beef.

The step that matters

Moving the joint closer to the fire after 1 hour. Removing the paper and moving the joint nearer the heat lets the surface brown and develop roasted flavour. Doing this too early or too late can leave the crust pale or the inside overcooked.

Swap the potato

How well each one fits the dish's main ingredients (beef, flour, horseradish, sauce):

  1. Mustardfits better
  2. Shallotfits better
  3. Beetrootfits better
  4. Potatothe original

Fit is the average pairing score against beef, flour, horseradish, sauce. Candidates are from the same food group and used in at least 100 recipes.
