Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Sift together the flour, salt, and baking powder.

  2. Add the butter and rub it in with your fingertips.

  3. Mix in the cream with a knife to form a soft dough.

  4. Turn the dough onto a lightly floured board and pat it to a thickness of one-third inch.

Shape and bake

  1. Cut with a biscuit cutter and place half of a stoned date on one half of each biscuit.

  2. Brush the edges with milk and fold the biscuit over.

  3. Press the edges together, brush the tops with milk, and place half a date on top of each roll.

  4. Bake on a buttered sheet at 400°F (200°C) for fifteen minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pastry flour
Forms the structure of the soft dough as the main body of the rolls.
Butter
Rubbed into the flour to add tenderness and richness to the dough.
Cream
Adds moisture and fat so the flour forms a soft, tender dough.
Baking powder
Releases gas during baking so the rolls rise and become light.
Dates
Provide natural sweetness and a soft, chewy filling inside the rolls.

The step that matters

Pressing the edges together before baking. If the edges are not sealed well, the filling can leak out during baking and the rolls may open up. Brushing the edges with milk helps them stick together.

Swap the dates

How well each one fits the dish's main ingredients (flour, butter, cream):

  1. Raisinfits better
  2. Vanillafits better
  3. Coconutfits better
  4. Datesthe original

Fit is the average pairing score against flour, butter, cream. Candidates are from the same food group and used in at least 100 recipes.
