Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Clean the small fish and remove the skin.

  2. Sprinkle the fish with coarse sea salt and black pepper.

  3. Dredge the fish in flour until fully coated.

  4. Dip the floured fish in beaten egg, then coat with cracker crumbs.

  5. Place the fish in a croquette basket and fry in deep, hot fat at 400°F (200°C) until richly browned and cooked through.

  6. Drain the fried fish on soft paper.

  7. Serve with Maitre d' Hotel Butter, Sauce Tartare, Hollandaise, or Tartar Sauce.

  8. Garnish with lemon slices and parsley.
