What each ingredient does

Salted cod fish
Provides the main savory flavor and the fish base of the balls.
Potatoes
Add starch and body, binding the mixture and keeping the balls soft inside.
Egg
Binds the mashed mixture together so the balls hold their shape while frying.
Butter
Adds richness and moisture, softening the mixture.

The step that matters

Beat the mixture until light. Beating incorporates air and evenly distributes the egg and butter, giving a lighter texture. Undersoaked or overworked mixtures can turn dense or gummy, so the consistency should be smooth before frying.

Swap the potato
