Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Melt the butter in a saucepan.

  2. Mix the bread and cracker crumbs together in a bowl and toss lightly with a fork.

Assemble

  1. Sprinkle the bottom of a buttered baking dish with some of the buttered crumbs.

  2. Layer the oysters on top and sprinkle with salt, pepper, and a slight grating of lemon peel.

  3. Add 1 tablespoon each of oyster liquor and milk.

  4. Cover with more crumbs and repeat the layering process.

  5. Finish with a layer of buttered crumbs on top.

Bake and serve

  1. Bake for 20 minutes at 400°F (200°C).

  2. Garnish with toast points and parsley before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main filling and savory flavor of the dish.
Cracker crumbs
Form the bulk of the crumb layers and absorb liquid for a soft, moist texture.
Butter
Coats the crumbs so they brown and add richness.
Milk or cream
Adds moisture so the crumbs soften and the layers stay tender.

The step that matters

Bake for 20 minutes at 400°F (200°C). Baking at this temperature for the stated time browns the buttered crumbs and cooks the oysters through. Overbaking can dry the crumbs and toughen the oysters, so check the top for even golden color.

Swap the lemon
