Fried Soft Shelled Crabs

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Clean the crabs and remove the sand bag and spongy substances under the soft shell.

  2. Sprinkle the crabs with coarse sea salt and black pepper.

  3. Dredge the crabs in flour, dip them in beaten egg, then coat them with fine cracker crumbs.

  4. Place the crabs in a croquette basket.

Fry and serve

  1. Fry the crabs in deep hot fat at 400°F (200°C) until richly browned, frying one at a time unless they are very small, turning them once while cooking.

  2. Drain the crabs on soft brown paper.

  3. Serve with Sauce Tartare.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Soft shelled crabs
The main ingredient, whose tender soft shell is eaten whole after frying.
Flour
Dry coating that helps the egg and crumbs adhere and promotes browning.
1 egg
Liquid binder that holds the cracker crumb coating in place during frying.
Fine cracker crumbs
Outer coating that becomes crisp and browned in the hot fat.

The step that matters

Frying one at a time at 400°F until richly browned. Crowding the basket drops the fat temperature, so the coating absorbs more oil and turns greasy instead of crisp. Frying in batches keeps the fat hot enough to brown the crumbs quickly.
