Baked Tomatoes

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the tomatoes

  1. Wash and wipe the tomatoes, then remove a thin slice from the stem ends.

  2. Scoop out the seeds and pulp from the tomatoes.

Fill and bake

  1. Mix the pulp with an equal quantity of cracker crumbs, salt, pepper, onion juice, and sugar.

  2. Refill the tomatoes with the mixture and place them in a buttered baking dish.

  3. Sprinkle with additional buttered crumbs and bake for 25 minutes at 400°F (200°C).
