What each ingredient does

Cold chicken
Forms the bulk of the croquette and gives it its main savoury flavour.
White sauce
Binds the chopped ingredients together so the croquettes hold their shape.
English walnut meats
Adds crunchy texture and a nutty flavour that contrasts with the soft filling.
Egg
Coats the croquettes so the breadcrumbs stick and help form a crisp, browned crust.
Breadcrumbs
Form a crisp, golden outer coating when fried.

The step that matters

Frying the croquettes in deep oil. The mixture is soft and held together only by the white sauce. If the oil is not hot enough, the croquettes absorb grease and may break apart; if it is too hot, the outside browns before the centre heats through.
