Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Goose or duck giblets
Provide the main meat and body of the soup as they stew until tender.
Butter and flour
Form a browned roux that thickens the soup and adds a toasted, nutty flavour.
Madeira
Adds sweetness and rich, deep aroma to the finished soup.
Onions
Build savoury depth and sweetness as they cook into the stock.

The step that matters

Browning the flour in the butter. Flour cooked in fat must be stirred until evenly brown; undercooked flour leaves a raw, pasty taste and weak thickening, while over-browning gives bitterness and dark colour.

Swap the white pepper

How well each one fits the dish's main ingredients (beef, onion, lemon, butter, flour, pepper, mushroom):

  1. Thymefits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. White pepperthe original

Fit is the average pairing score against beef, onion, lemon, butter, flour, pepper, mushroom. Candidates are from the same food group and used in at least 100 recipes.
