Ingredients

Directions

The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

  1. In a saucepan, combine cayenne, Worcestershire sauce, and bread crumbs. Stir steadily while boiling for 5 minutes.

  2. Add egg yolks, parsley, and lemon juice. Mix well.

  3. Fill prepared shells with the mixture, sprinkle with bread crumbs, and top with small bits of butter.

  4. Bake in a hot oven (400°F / 200°C) for 8 to 10 minutes until slightly brown.

  5. Arrange on a folded napkin, garnish with quartered lemons, and serve.
