Why it works: Potato and rice match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 851 recipes. Both carry 2-acetyl-1-pyrroline, which smells popcorn, roasted. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Reheat the roast

  1. Reheat the gravy and place the roast beef in it, covering closely.

  2. Put the covered roast in a 400°F (200°C) oven for 10 minutes or until heated through.

  3. Alternatively, slice the roast and heat in hot gravy.

Make the hash

  1. Mix chopped beef with potatoes, bread crumbs, or rice, adding salt, pepper, and enough water or soup to moisten.

  2. Heat butter or beef fat in a skillet, add the mixture, cover, and steam until heated.

  3. Remove the cover and let it dry out until a brown crust forms on the bottom.

Make the cakes

  1. For cakes, form the mixture into small cakes, dust with flour, and fry in beef dripping until browned.

What each ingredient does

Roast beef
Is the main meat that is reheated and becomes the dish's flavour base.
Gravy
Keeps the beef moist while it reheats and adds savory flavour.
Chopped or mashed potatoes
Bulks out the mixture and helps bind it into a cohesive hash.
Bread crumbs
Absorb moisture and help bind the mixture together.
Flour
Dusted on the cakes so they brown and form a crisp outer surface.
Beef dripping
Fat for frying the cakes, adding richness and encouraging browning.

The step that matters

Remove the cover and let it dry out. Covered steaming keeps the hash moist, so a brown crust only forms once the lid is off and surface moisture evaporates. Uncovered too briefly leaves it pale and soggy.

Swap the potato

How well each one fits the dish's main ingredients (beef, bread, rice, pepper, butter, flour):

  1. Potatothe original
  2. Leekfits about as well
  3. Capsicumfits about as well
  4. Asparagusfits about as well

Fit is the average pairing score against beef, bread, rice, pepper, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
