Why it works: Cucumber and beetroot match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 345 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

What each ingredient does

Sardines
Form the main body of the dish, with their flesh set within the jelly.
Cooked tongue or lox
Adds savory, salty flavor that wraps and complements the sardines.
Aspic jelly
Gelatin-based jelly that sets to encase the sardine rolls and hold the shape.

The step that matters

Pour the half-set aspic. If the aspic is too liquid, it will not hold the rolls and cover them evenly; if it has already set fully, it will not coat smoothly. Half-set gelatin is thick enough to cling and cover without sinking the fish.

Swap the tomato

How well each one fits the dish's main ingredients (cucumber, beetroot):

  1. Lettucefits better
  2. Horseradishfits better
  3. Chivefits better
  4. Tomatothe original

Fit is the average pairing score against cucumber, beetroot. Candidates are from the same food group and used in at least 100 recipes.
