What each ingredient does

Young cabbage
Forms the edible wrapper that holds the stuffing and becomes tender through braising.
Seasoned meat
Provides the savoury, rich filling that gives the dish its main flavour and body.
Breadcrumbs
Absorb juices and bind the meat filling so it holds together when stuffed and pressed.
Bacon
Lines the pan and releases fat and smoky flavour into the braising liquid and cabbage.
Espagnole sauce
Moistens the cabbage during braising and, reduced, adds a rich, glossy sauce for serving.

The step that matters

Braising until tender. Cabbage needs slow, moist heat to soften its tough fibres fully. Stopping early leaves it firm, while overcooking can make it mushy and cause the filling to break apart.
