Ingredients

Directions

Prepare the eggs and shallots

  1. Break the eggs into a bowl, add the cream or milk, season with salt and pepper, and beat until well mixed.

  2. Peel and finely chop the shallots, then fry them lightly in 1 tablespoon of butter in an omelet pan.

Cook and fill the omelet

  1. Add the remaining butter; when melted, pour in the beaten eggs and stir quickly over medium heat until the mixture begins to set.

  2. Shape the omelet into a cushion form on one side of the pan, then fill the center with hot rice flavored with curry sauce and mixed with chutney.

  3. Fold the omelet, cook until golden brown, then carefully turn it out onto a serving dish.

Serve

  1. Pour heated curry sauce around the base of the dish and serve immediately.

What each ingredient does

Eggs
Set into a soft structure that forms the omelet's body.
Butter
Adds richness and flavor, and helps the omelet brown and release from the pan.
Shallots
Add a mild, sweet onion flavor when softened in butter.
Cooked rice
Forms the moist, filling centre that gives the omelet its body.
Madras chutney
Adds sweet, tangy, spiced flavor to the rice filling.

The step that matters

Stirring the eggs over medium heat until just setting. Egg proteins set with heat, so stirring keeps curds small and tender. Overcooking makes the omelet tough and dry, and it becomes hard to fold without cracking.

Swap the shallot

How well each one fits the dish's main ingredients (egg, butter, cream, rice, pepper, sauce):

  1. Capsicumfits better
  2. Asparagusfits better
  3. Spinachfits about as well
  4. Shallotthe original

Fit is the average pairing score against egg, butter, cream, rice, pepper, sauce. Candidates are from the same food group and used in at least 100 recipes.
