What each ingredient does

Chicken
Forms the main body of the cutlets, providing the bulk and savory meat flavor.
Breadcrumbs
Absorb moisture and bind the chopped meat so the cutlets hold their shape.
Egg
Binds the mixture together and forms a coating that browns during frying.
White sauce
Moistens the mixture so the cutlets stay tender rather than dry.
Butter
Conducts heat for frying and adds richness and browning to the crust.

The step that matters

Fry in boiling butter until light brown. Frying in hot butter sears the coating quickly, forming a crisp browned crust that seals the cutlet. Too low a heat lets the coating absorb fat and turn greasy, and too high a heat burns the butter before the centre is hot.

Swap the onion

How well each one fits the dish's main ingredients (chicken, parsley, lemon, pepper, nutmeg, egg, tarragon):

  1. Shallotfits better
  2. Spinachfits better
  3. Asparagusfits better
