Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Shallots
Soften and add a mild, sweet aromatic base to the sauce.
Mushrooms
Add earthy savoury flavour and body as they cook down.
White wine
Adds acidity and depth as it reduces into the sauce.
Espagnole sauce
Forms the thick, rich base that gives the sauce its body.

The step that matters

Simmer until well reduced. Reducing the wine and stock concentrates flavour and thins the liquid before the Espagnole is added. Under-reducing leaves a watery, weak sauce, while over-reducing can make it too salty or intense.

Swap the thyme

How well each one fits the dish's main ingredients (shallot, mushroom, white wine, veal, sauce):

  1. Capersfits about as well
  2. Tarragonfits about as well
  3. Thymethe original
  4. Garlicfits less well

Fit is the average pairing score against shallot, mushroom, white wine, veal, sauce. Candidates are from the same food group and used in at least 100 recipes.
