What each ingredient does

Salt pork
Renders fat and flavour into the pot as the base for the soup.
Potatoes
Add starch and body, becoming tender and giving the soup substance.
Flour
Thickens the broth into a creamy, smooth consistency when boiled.
Milk
Adds richness and creaminess, softening the savoury broth.
Clams
Provide the main seafood flavour and briny taste of the soup.

The step that matters

Mixing the flour into the milk. Flour mixed directly into hot liquid clumps into lumps. Blending it first with a little cold water makes a smooth slurry, so it thickens evenly when the soup boils.
