Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Form the bulk of the stew and give it body and acidity.
Okra
Releases natural thickening starch as it cooks, helping thicken the stew.
Chicken
Provides the main protein, cooked tender in ham gravy.
Egg yolks
Enrich and thicken the liquid as they set gently with the other ingredients.
Onion
Adds savory depth as it softens into the tomato base.

The step that matters

Adding the egg mixture. Egg yolks can curdle or scramble if they meet very hot liquid too quickly. Stirring a little hot liquid into the yolks first, then folding them in gently over lower heat, helps them thicken the stew smoothly.
