Baked Chicken

Ingredients

Directions

The book says “a very hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Cut the chicken open and lay it flat in a pan, breaking down the breast and back bones.

  3. Dredge the chicken with flour and season well with salt and pepper, adding bits of butter.

Bake and finish

  1. Bake in the hot oven, basting frequently with melted butter.

  2. When the chicken is half done, remove it and finish by broiling on a grill over bright coals.

  3. Pour melted butter and the pan juices over the chicken before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Forms the main body of the dish, providing the protein and most of the texture.
Flour
Coats the skin so it can brown and crisp in the oven.
Butter
Adds richness and moisture, and helps the skin brown as it bastes.

The step that matters

Basting with melted butter during baking. Butter that runs over the chicken keeps the surface moist and helps the skin brown evenly. Without regular basting, the skin can dry out and brown unevenly.
