Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

Prepare the mixture

  1. In a bowl, combine minced chicken, bread crumbs, beaten egg, and enough gravy or drawn butter to moisten.

  2. Add pepper, salt, chopped parsley, and the rubbed egg yolks. Mix gently to form a paste.

Shape and fry

  1. Shape the mixture into rolls or oval balls using floured hands.

  2. Roll each ball in flour until well coated.

  3. Fry a few croquettes at a time in hot fat (half lard and half butter) to maintain their shape.

  4. Drain on a hot colander to remove excess fat.

Serve

  1. Serve in a heated dish with cresses or parsley.

What each ingredient does

Minced chicken
Forms the main body of the croquettes and gives them their savoury flavour.
Fine bread crumbs
Absorb moisture and help the mixture hold together as a paste.
Egg
Binds the mixture so it holds its shape when formed and fried.
Hard boiled egg yolks
Add richness and a smooth, crumbly texture to the paste.

The step that matters

Fry a few croquettes at a time in hot fat. Crowding the pan drops the fat temperature, so the croquettes absorb more oil and may lose their shape. Hot fat sets the outside quickly and keeps them intact.
