What each ingredient does

Butter
Adds fat and richness to the base of the sauce.
Flour
Thickens the sauce as it cooks with the butter and liquids.
Mushrooms
Contribute savory, earthy flavor and body to the sauce.
Sherry wine
Adds acidity and depth of flavor to the sauce.
Beef stock
Builds a savory beef flavor into the sauce.

The step that matters

Cooking the flour until brown. Flour cooked in fat gains a nutty color and flavor, but if it is stirred too little it can scorch on the bottom of the pan, and if it is not cooked enough the sauce tastes raw and pasty. Keep stirring over steady heat.
