Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. In a large bowl, combine the crushed Boston crackers, eggs, salt, pepper, sage or summer savory, and chopped veal. Mix all ingredients well until fully combined.

  3. Pack the mixture tightly into a deep tin pan.

  4. For added flavor, top with butter before baking.

Bake and serve

  1. Bake in the preheated oven for 1 hour.

  2. Allow to cool, then slice thinly to serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the main body and meaty texture of the loaf.
Eggs
Bind the mixture and help it set firm as it bakes.
Boston crackers
Absorb moisture and add bulk, helping the loaf hold together.

The step that matters

Pack the mixture tightly into the pan. Packing removes air pockets so the loaf bakes dense and holds together when sliced. Loose packing can cause crumbling and uneven setting.

Swap the sage

How well each one fits the dish's main ingredients (egg, pepper, veal, butter):

  1. Parsleyfits better
  2. Sagethe original
  3. Nutmegfits about as well
  4. Tarragonfits about as well

Fit is the average pairing score against egg, pepper, veal, butter. Candidates are from the same food group and used in at least 100 recipes.
