Why it works: Pepper and nutmeg match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 13,015 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Jellied Veal

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the veal

  1. Boil the veal until tender.

  2. Chop the veal finely.

  3. Place the chopped veal in a mold.

  4. Add the water it was boiled in.

  5. Season with salt and pepper to taste.

  6. Layer hard‑boiled eggs on top for added flavor.

  7. Mix in butter and cream if the veal is thin.

Form and bake

  1. Form the mixture into a large roll.

  2. Dot the roll with bits of butter.

  3. Sprinkle pounded crackers over the roll.

  4. Mix a little of the crackers with the meat.

  5. Place the roll in a 300°F (150°C) oven.

  6. Add water occasionally while baking.

  7. Cook slowly for 2 hours.

Cool and serve

  1. Let the roll cool.

  2. Slice thinly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the body of the roll and sets into a firm, sliceable jelly as it cools.
Eggs
Hard-boiled eggs add richness and a firm, contrasting texture when sliced.
Crackers
Pounded crackers bind the meat and help hold the roll together while it bakes.
Butter
Adds fat and moisture, keeping the thin veal mixture rich and tender.
Cream
Adds richness and moisture to the mixture when the veal is thin.

The step that matters

Cook slowly with added water. Slow, gentle heat keeps the veal moist and tender rather than dry and tough. Adding water during baking replaces liquid that evaporates, and the meat's natural gelatin then helps the roll set firm when cooled.

Swap the nutmeg

How well each one fits the dish's main ingredients (veal, pepper, egg, butter, cream):

  1. Nutmegthe original
  2. Parsleyfits about as well
  3. Tarragonfits less well
  4. Sagefits less well

Fit is the average pairing score against veal, pepper, egg, butter, cream. Candidates are from the same food group and used in at least 100 recipes.
