Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Meat from the head
Forms the bulk of the set mass, giving the head cheese its body.
Onions
Add sweetness and aromatic flavour that balances the rich meat.
Heart
Adds meaty flavour and body to the mixture.
Liver
Adds deep, rich flavour and helps the mixture hold together.
Tongue
Adds tender meat and rich flavour to the mixture.

The step that matters

Boil the head until very soft. Collagen from bones, skin and connective tissue turns into gelatin as it cooks slowly in water. Under-cooked meat stays tough and the mixture will not bind and set firmly when pressed and cooled.

Swap the sage

The recipe marks sage as optional. How well each one fits the dish's main ingredients (meat, liver, pepper, onion):

  1. Thymefits better
  2. Garlicfits better
  3. Parsleyfits about as well
  4. Sagethe original

Fit is the average pairing score against meat, liver, pepper, onion. Candidates are from the same food group and used in at least 100 recipes.
