Boiled Ham

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Soak the ham in cold water for 12 to 24 hours.

Boil

  1. Cover the ham with boiling water, add vinegar, bay leaves, thyme, and parsley.

  2. Boil slowly for 2.5 hours.

  3. Remove the ham, skim the surface, and leave a ½ inch layer of fat.

  4. Trim off any blackened parts with a sharp knife.

Glaze and bake

  1. Place the ham in a dripping pan, fat side up.

  2. Grate bread crust over the ham and sprinkle with powdered sugar.

  3. Bake in a 400°F (200°C) oven for 30 minutes until browned.

Serve

  1. Serve cold, slicing the best parts; use scraps for sandwiches or an omelet.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ham
Provides the main meat, which is slowly cooked until tender and then browned.
Vinegar
Adds acidity that brightens the flavor of the cooking liquid and the rich pork.
Powdered sugar
Sweetness that helps the topping caramelize and brown in the oven.
Bread crust
Forms a crisp, browned crumb coating on the surface of the ham.

The step that matters

Bake until browned. Sugar and crumbs brown quickly at high heat, so the surface can burn before it is evenly colored. Watch closely during the final 30 minutes in the hot oven.

Swap the thyme

How well each one fits the dish's main ingredients (ham, vinegar, parsley, bread, sugar):
