Chicken Salad
Ingredients
Directions
Make the dressing
In a bowl, mix the egg yolks, melted butter (or olive oil), mustard, salt, and celery seed until well combined.
Add the vinegar and place the mixture over low heat, stirring constantly until it thickens.
Assemble and serve
Pour the thickened dressing over the chopped chicken and mix well.
Just before serving, stir in the chopped celery.
If desired, adjust the seasoning with more mustard and cayenne pepper.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Egg yolks
- Thicken the dressing and help bind the fat and vinegar into a smooth emulsion.
- Butter or olive oil
- Adds richness and moisture, coating the chicken and carrying flavour.
- Mixed mustard
- Adds sharpness and helps emulsify the dressing so it stays smooth.
- Vinegar
- Adds acidity and tang that balances the rich yolk and fat.
- Cooked chicken
- Forms the main body of the salad, providing substance and bulk.
- Celery
- Adds crisp texture and fresh, slightly savoury crunch.
The step that matters
Thickening the dressing over low heat. Egg yolks thicken as their proteins gently set. Too much heat or too little stirring can scramble them into lumps, so keep the heat low and stir constantly.
Swap the celery
How well each one fits the dish's main ingredients (egg, butter, mustard, vinegar, chicken, pepper):
- Tarragonfits better
- Capersfits better
- Dillfits about as well
- Celerythe original
Fit is the average pairing score against egg, butter, mustard, vinegar, chicken, pepper. Candidates are from the same food group and used in at least 100 recipes.
