What each ingredient does

White spine cucumbers
Provide the crisp, watery base of the salad that the brine later flavours.
White onions
Add sharp aroma and flavour that mellows during the long resting period.
Green peppers
Add fresh, slightly bitter vegetable flavour and crunch to the mixture.
Black mustard seed
Contributes pungent, sharp heat that develops as the seeds sit in vinegar.
White mustard seed
Contributes milder, tangy mustard flavour to the pickled mixture.
Celery seed
Adds a warm, savoury aroma that complements the mustard seeds.

The step that matters

Draining the mixture for 24 hours. Salt draws water out of the cucumbers and onions. Draining removes that liquid so the vegetables stay crisp and the vinegar is not diluted in the jars.

Swap the onion
