What each ingredient does

Cucumbers
Provide the bulk of the ketchup and, once drained, its fresh, watery body.
Onions
Add savory aroma and a sharp background flavor that rounds out the vinegar.
Green peppers
Contribute a grassy, vegetal bite and extra texture to the chopped mixture.
Vinegar
Acidity that flavors the ketchup and acts as a preservative, helping it keep for years.

The step that matters

Draining the grated cucumbers overnight. Cucumbers are mostly water. Draining removes excess liquid so the ketchup does not become thin or dilute, and the vinegar's acidity is not weakened.

Swap the onion

How well each one fits the dish's main ingredients (cucumber, pepper, vinegar):

  1. Capsicumfits better
  2. Radishfits better
  3. Mustardfits better
  4. Onionthe original

Fit is the average pairing score against cucumber, pepper, vinegar. Candidates are from the same food group and used in at least 100 recipes.
