Ingredients

Directions

Make the stew

  1. Strain the juice from the oysters into a stew pan and bring to a boil.

  2. Remove any scum that forms on the surface.

  3. Rinse the oysters in cold water and add them to the boiling juice.

  4. Stir in the cream or milk, butter, salt, and cayenne pepper.

Prepare the toast and serve

  1. Prepare buttered toast by toasting the bread quickly and cutting it into dice-shaped pieces.

  2. Pour the oyster mixture over the toast, garnish with parsley, and serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavor and the tender, briny body of the stew.
Oyster juice
Forms the savory, salty liquid base that carries the stew's flavor.
Cream or milk
Adds richness and a smooth, mellow texture that softens the briny taste.
Butter
Contributes fat for richness and a silky mouthfeel in the broth.
Bread
Soaks up the broth, giving the stew a soft, absorbent base.

The step that matters

Rinse the oysters and add them to the boiling juice. Boiling oysters for too long toughens their proteins and makes them rubbery, so they should be added near the end and heated only until their edges curl.

Swap the parsley

How well each one fits the dish's main ingredients (oyster, cream, butter, pepper, bread):

  1. Nutmegfits about as well
  2. Parsleythe original
  3. Celeryfits about as well
  4. Sagefits less well

Fit is the average pairing score against oyster, cream, butter, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
