What each ingredient does

Indian meal
Cornmeal thickens as it cooks in the hot milk, giving the pudding its body and structure.
Molasses
Adds sweetness, deep color, and a rich, slightly bitter flavor.
Milk
Provides the liquid that hydrates the meal and gives the pudding a soft, custard-like texture.
Butter
Adds fat for richness and a smoother mouthfeel.

The step that matters

Pour in boiling hot milk and mix well. Heat is needed to swell and gelatinize the cornmeal starch so the pudding thickens. Mixing well while adding the hot milk prevents lumps of dry meal from forming.

Swap the ginger

How well each one fits the dish's main ingredients (butter, molasses, milk):

  1. Cinnamonfits better
