What each ingredient does

Beef
Provides the meaty body and savoury bulk of the filling once cooked and chopped.
Suet
Adds fat that keeps the filling moist and rich as it stands.
Apples
Contribute moisture, tartness and body to the fruit filling.
Raisins
Add concentrated sweetness and chewy texture.
Sugar
Sweetens the filling and helps preserve it.
Brandy
Adds aroma and acts as a preservative that keeps the filling from spoiling.

The step that matters

Cover tightly. Sealing the jars limits contact with air, which helps prevent mould and spoilage while the filling matures. Brandy poured over the top adds further protection, so the seal should be complete before storing.
