What each ingredient does

Mutton
Provides the meat and rich flavour that the stew is built around.
Potatoes
Break down slowly to thicken the stew and add body to the liquid.
Onions
Soften during stewing and add sweetness that balances the meat.

The step that matters

Keeping the lid tightly shut during the long stew. Gentle, sealed simmering keeps the liquid from evaporating too fast and lets the meat become tender. Shaking the pot occasionally helps prevent the bottom layer from scorching.
