What each ingredient does

Chicken
Provides the meat and, through the bones, the flavour of the stew base.
Fresh cream or cornstarch
Thickens the stew, giving it a smooth, body-rich texture.
Butter
Adds richness and fat, helping the thickener blend smoothly into the stew.

The step that matters

Thicken with cream or cornstarch mixed with butter. Cornstarch must be mixed with fat or cold liquid first so it disperses without lumps, and it thickens only when heated. Adding it directly to hot liquid causes clumps and uneven texture.

Swap the allspice

How well each one fits the dish's main ingredients (chicken, nutmeg, pepper, cream, butter):

  1. Cinnamonfits better
  2. Parsleyfits better
  3. Thymefits better
  4. Allspicethe original

Fit is the average pairing score against chicken, nutmeg, pepper, cream, butter. Candidates are from the same food group and used in at least 100 recipes.
