Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton chops
Provide the meat that is browned and cooked over the fire.
Boiling fat or lard
Adds richness and helps the crumb coating brown and crisp.
Bread crumbs
Form a coating that browns and crisps on the outside of the chops.

The step that matters

Broil the chops until nicely browned over a quick fire, turning occasionally.. Browning depends on a hot, fast fire and regular turning; too slow a heat dries the meat before the crumb coating crisps, and uneven turning can scorch one side.

Swap the potato

How well each one fits the dish's main ingredients (mutton, bread, pepper):

  1. Capsicumfits better
  2. Tomatofits better
  3. Carrotfits better
  4. Potatothe original

Fit is the average pairing score against mutton, bread, pepper. Candidates are from the same food group and used in at least 100 recipes.
