  3. Add the neck of mutton or veal and the onion, and boil until you have a good stock.

  4. Skim the stock, let it cool, and then strain it.

Finish and serve

  1. The next day, bring the stock to a boil, then add the bread crumbs, nutmeg, white pepper, and salt.

  2. Just before serving, stir in the cream.

  3. Serve with toasted bread cut into dice.

What each ingredient does

White stock
Forms the liquid base and carries the flavour of the fowl and meat.
Fine bread crumbs
Absorb liquid and thicken the soup slightly, giving it body.
Cream
Adds richness and a smooth, velvety texture to the finished soup.
Nutmeg
Adds a warm, aromatic note that rounds out the savoury stock.
Onion
Builds savoury depth as it simmers into the stock.

The step that matters

Stirring in the cream just before serving. Cream held at a hard boil for long can split and turn grainy, and reheating it repeatedly dulls its flavour. Adding it last, over gentle heat, keeps the soup smooth and rich.

Swap the white pepper
