Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the cake, giving it a firm, sliceable texture.
Bread crumbs
Absorb moisture and help bind the mixture so it holds its shape.
Pork
Adds fat, which keeps the cooked cake moist and tender.
Raw eggs
Bind the mixture and set when heated, holding the cake together.

The step that matters

Steaming for 2 hours. Gentle, steady steam cooks the egg-bound mixture evenly without drying it out. Too little steam or heat can leave the centre undercooked, while too much can make the texture rubbery.

Swap the clove

How well each one fits the dish's main ingredients (veal, bread, pork, pepper, egg):

  1. Sagefits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Clovethe original

Fit is the average pairing score against veal, bread, pork, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
