Timbale Turinoise,

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

Mix and bake

  1. In a bowl, combine the macaroni, ham, ox tongue, mushrooms, Parmesan cheese, and lemon rind.

  2. Add the demi-glace or Madeira sauce, chicken or rabbit meat, butter, white sauce, cream, eggs, salt, and pepper, and mix well.

  3. Pour the mixture into a greased baking dish.

  4. Bake for 30-40 minutes until set and golden on top.

  5. Let cool slightly before serving.

What each ingredient does

Eggs
Bind the mixture and help it set firm when baked.
Macaroni
Provides the body and bulk that holds the timbale together.
Cream
Adds moisture and richness, keeping the custard-like mixture tender.
Parmesan cheese
Adds savory flavor and helps the top brown as it bakes.
White sauce
Adds moisture and a smooth, creamy texture to the mixture.
Demi-glace or madeira sauce
Adds deep savory flavor and color to the meat and pasta.

The step that matters

Bake until set. Underbaking leaves the egg-based mixture loose and wet, while overbaking can make it dry and rubbery. Baking until just set lets the eggs firm into a sliceable custard that holds its shape.
