Ingredients

Directions

The book says “a hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Roast the beef

  1. Preheat your oven to 350°F (175°C).

  2. Place the beef on a spit, bony side toward the fire, and roast slowly, turning often.

  3. Baste the meat frequently with drippings and salted water.

  4. When nearly done, dredge with flour mixed with a little salt and baste again.

Make the gravy

  1. Pour off the gravy half an hour before it's done, season with salt and pepper, and thicken with cornstarch or potato starch.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Slow roasting cooks the large cut through, and basting keeps the surface moist.
Flour
Dredging the meat near the end helps form a browned, flavorful crust.
Cornstarch or potato starch
Thickens the drippings into gravy as the liquid heats and the starch swells.

The step that matters

Thicken the gravy with starch. Starch must be mixed smoothly into cool liquid first, then heated, so its granules swell and thicken evenly instead of forming lumps.

Swap the potato
