Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Sweeten the chopped apples with sugar.

  2. Place 3 to 4 tablespoons of the sweetened apples in the center of the pastry.

  3. Fold the pastry in half lengthwise and seal the edges by pressing or scalloping with a teaspoon.

Bake

  1. Grease a baking tin and lay the rolls on it.

  2. Bake in a moderate oven at 350°F (175°C) for 30 minutes.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the filling's bulk and tart fruit flavor that fills the pastry.
Sugar
Sweetens the apples and helps draw out their juices while they sit.
Pastry
Forms the outer shell that encloses the filling and bakes to a crisp, golden layer.

The step that matters

Seal the edges firmly. If the seam is not pressed or scalloped tightly, the juicy apple filling can leak out during baking, leaving the rolls dry inside and the pastry soggy or burnt where the juice escapes.

Swap the apple

How well each one fits the dish's main ingredients (sugar, butter):

  1. Vanillafits better
  2. Figfits about as well
  3. Peachfits about as well
  4. Applethe original

Fit is the average pairing score against sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
