Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the base

  1. In a saucepan, melt the butter over medium heat and add the sliced onions, cardamoms, garlic, and cinnamon.

  2. Cook until the onions are tender but not browned.

Simmer and serve

  1. Stir in the curry powder, curry paste, beef pieces, and salt.

  2. Cover and let it simmer in a 300°F (150°C) oven or over very low heat for 1.5 hours.

  3. Add a squeeze of lemon before serving.

  4. Serve with well-boiled rice on the side.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main protein, which becomes tender through long, gentle simmering.
Onions
Soften and sweeten as they cook, building the body of the sauce.
Butter
Carries the spices and adds richness and fat to the sauce.
Curry paste
Adds concentrated spice flavour and aroma to the sauce.
Curry powder
Adds warm, earthy spice flavour and aroma to the sauce.

The step that matters

Cook the onions until tender but not browned. Onions cooked gently release their sweetness and soften into the sauce; browning them adds bitter, caramelised notes that change the intended flavour of the curry.

Swap the onion

How well each one fits the dish's main ingredients (beef, butter, cardamom, clove, garlic, cinnamon, lemon):

  1. Shallotfits better
  2. Carrotfits better
  3. Sweet potatofits better
