What each ingredient does

Butter
Forms the base fat; clarifying it removes milk solids and water so the honey blends into a smooth spread.
Honey
Adds sweetness and flavor, and is mixed in after clarifying so it blends evenly into the butter.

The step that matters

Once clarified and just before boiling, remove from water and cool.. Butter that is removed too late can overheat and scorch, while removing it too early leaves milk solids and water behind. Milk solids and water separate from the fat during gentle heating, so timing the removal controls how clear and stable the finished butter is.
