Capon, Stuffed and Roasted

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Mix suet, ham, bread crumbs, parsley, marjoram, thyme, cayenne, salt, mace, and lemon rind in a bowl.

  2. Bind the mixture together with the beaten eggs.

  3. Stuff the capon with the forcemeat.

  4. Cover the capon with buttered paper.

  5. Roast the capon at 400°F (200°C), basting frequently.

  6. Serve with brown gravy and bread sauce.
