Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Cauliflower with Stuffing

Ingredients

Directions

Prepare

  1. Choose a saucepan that fits the dish you will use.

  2. Clean the cauliflower and cut it into sprigs.

  3. Blanch the sprigs in boiling salted water for 2 minutes, then drain.

Assemble

  1. Pack the sprigs tightly in the saucepan with the heads down, on top of the bacon slices.

  2. Fill the gaps with the stuffing made from veal, suet, breadcrumbs, pepper, salt, parsley, chives, and mushrooms.

  3. Strew the stuffing over the cauliflower in layers.

  4. Pour the beaten eggs over the mixture and let them soak in.

  5. Add enough stock to cover the cauliflower.

Cook and serve

  1. Simmer gently until the cauliflower is tender and the sauce is reduced, about 45 minutes.

  2. Invert the saucepan onto a hot dish to serve.

What each ingredient does

Eggs
Bind the stuffing and set into a custard-like sauce as they cook.
Breadcrumbs
Absorb liquid and give the stuffing body and a soft texture.
Veal
Provides savory meat flavor and body to the stuffing.
Beef suet
Adds fat that enriches the stuffing and carries flavor.
Bacon
Lays under the cauliflower, releasing fat and savory flavor into the stock.
Cauliflower
Forms the main structure, becoming tender as it simmers.

The step that matters

Simmer gently until the cauliflower is tender and the sauce is reduced. Vigorous boiling can break up the cauliflower sprigs and scramble the egg, so gentle heat lets the eggs set smoothly while the stock reduces into a sauce.
