What each ingredient does

Celery
Forms the main body of the dish and becomes tender and sweet during long, gentle braising.
Butter
Adds richness and carries flavour as it fries the vegetables and starts the braise.
Stock
Provides the liquid that gently cooks the celery and builds a savoury sauce.
Onion
Softens and sweetens while frying, adding aromatic depth to the braising liquid.

The step that matters

Long, gentle braise. Celery is fibrous and needs slow, low-heat cooking in liquid so the tough fibres soften fully. A hard boil can break the pieces apart and leave the centres firm.

Swap the onion

How well each one fits the dish's main ingredients (celery, butter, carrot, turnip):

  1. Leekfits better
  2. Parsnipfits better
  3. Beetrootfits better
  4. Onionthe original

Fit is the average pairing score against celery, butter, carrot, turnip. Candidates are from the same food group and used in at least 100 recipes.
