Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cheese
Melts into the sauce and, as its proteins set, gives the fondue its body and stringiness.
Eggs
Set when warmed, thickening and enriching the fondue.
Bread crumbs
Absorb the milk and soften, helping thicken the mixture and give it body.
Milk
Provides the liquid that melts the cheese into a smooth, pourable sauce.
Butter
Adds fat that carries flavor and helps keep the cheese smooth as it melts.

The step that matters

Adding the eggs just before serving. Egg proteins set when heated, so if the mixture is too hot or the eggs cook too long, they can scramble and make the fondue grainy. Adding them last keeps the sauce smooth and thick.
