Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Mix the Parmesan cheese, butter, flour, Cheddar cheese, and egg yolk into a stiff paste.

  2. Flavor the mixture with cayenne, salt, and a little pounded mace.

Shape and bake

  1. Roll out the mixture thinly and cut it into fingers about 4 inches long and ½ inch wide.

  2. Bake in a 400°F (200°C) oven for a few minutes until golden.

Serve

  1. Serve cold, piled on a dish in transverse rows.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Parmesan cheese
Adds savory, salty flavor and helps the straws brown and crisp when baked.
Butter
Provides fat that makes the dough rich and tender, and helps it crisp in the oven.
Flour
Forms the structure that holds the stiff paste together and sets when baked.
Cheddar cheese
Adds rich, sharp cheese flavor and extra fat to the dough.
Egg yolk
Binds the dough and adds richness and color to the baked straws.

The step that matters

Rolling the dough thinly. If the dough is rolled thick, the centre stays soft and doughy while the edges over-brown. Thin, even pieces bake through and turn evenly crisp.

Swap the mace

How well each one fits the dish's main ingredients (parmesan cheese, butter, flour, cheddar cheese, egg, pepper):

  1. Parsleyfits better
  2. Nutmegfits better
  3. Capersfits better
  4. Macethe original
