Clam Soup

Ingredients

Directions

  1. Wash the clams and place them in a saucepan with just enough boiling water to prevent burning.

  2. Boil for a few minutes until the shells open and the juice runs out.

  3. Remove the clams from their shells and chop them small.

  4. Strain the clam liquor and stir in the chopped clams.

  5. Season with pepper and thicken with a little butter rolled in flour.

  6. Let it boil for 15 minutes.

  7. Place small pieces of toasted bread in a tureen before pouring the soup in.

  8. Optionally, add onions, celery, milk, or well-beaten egg yolks for flavor.
