Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Breaks down during simmering to thicken the soup and give it body.
Butter
Adds richness and a smooth, rounded mouthfeel to the soup.
Crab meat
Provides the main flavour and delicate flaked texture of the soup.
Milk or white stock
Forms the liquid base that the rice cooks in and gives the soup its body.
Essence of anchovies
Adds a salty, savoury depth that rounds out the crab flavour.

The step that matters

Heating after the crab and anchovies are added. Once the crab and anchovy essence go in, boiling can toughen the delicate crab meat and make the soup grainy or curdled, so it should be heated gently only until hot.

Swap the cinnamon
