What each ingredient does

Cranberries
Provide the tart base flavour and, as they soften, the body of the sauce.
Sugar
Sweetens the sauce and balances the sharp tartness of the cranberries.

The step that matters

Add the sugar only once the cranberries are soft. Sugar dissolves most easily into a hot, softened fruit mixture. Stirring until fully dissolved prevents grittiness and keeps the sweetness evenly distributed through the sauce.
